Pumpkin French Toast Recipe

I decided to celebrate Septober and Fall I would share a few of my favorite fall recipes with you!

This is probably one of my absolute FAVORITE breakfast foods of all time!

Pumpkin. French. Toast.

What you will need:
5 1/2- 7 1/2 cups one inch bread cubes
7 large eggs
2 cups of milk
1 tsp vanilla extract
1 1/2 tsp pumpkin spice
1/4 cup pumpkin butter OR 1/2 cup pumpkin puree
3-4 tbs brown sugar (for topping)
nuts: pecans or walnuts (optional)

Instructions:
1. Cut bread slices into 1 inch cubes (I used dried bread cubes from a grocery store bakery). Use enough to fill a 9x13 greased baking dish.
2. In a large bowl whisk eggs, milk, vanilla, pumpkin butter (or puree), and pumpkin spice until well mixed. Pour over bread and push down with a spoon or hands until it is all soaked or mostly covered. Cover with lid or saran wrap, refrigerate overnight.
3. In the morning, preheat oven to 350 degrees F. Uncover and top with brown sugar, additional pumpkin spice and nuts if desired. Bake 35-45 minutes until golden brown or until not longer wet.
4. Serve right away with maple syrup, honey or agave.
